Worries go down better with soup!

We are all dealing with a massive upheaval to our life and daily routine at present. It is a trying time, especially for those who have had to postpone their event; one they have been looking forward to for months.

It is okay for you to feel disappointed and an angst of powerlessness.

Soup puts the heart at ease, calms down the violence of hunger, eliminates the tension of the day, and awakens and refines the appetite.

The blue cheese and our brie honeycomb cheese would have to be some of the most requested items for us when custom designing our grazing platters. So chef decided to provide all you blue cheese lovers with a delicious creamy broccoli and blue cheese soup recipe to try at home.

Not a fan of blue cheese? We encourage you to try this recipe with blue cheese because the blue cheese balances out the broccoli and gives it an extra layer of flavour. However if your not open to trying it’s totally okay, chef took you into consideration and recommends your substituting the blue cheese with parmesan or cheddar.

What you need

1 Tablespoon coconut oil
2 onions chopped
3 cloves of garlic
1 large head of broccoli, roughly chopped
2 large Zucchini, chopped in rounds
2 large potatoes peeled and finely diced
5 cups of veg or chicken stock
2 cups of baby spinach 
80g your fav blue cheese
1/3 cup cream

Directions

Step 1
Using a medium heat, place the oil in large saucepan.
Add onion, garlic and sauté until soft.
Step 2
Add broccoli, zucchini, potato and stock.
Bring to a simmer and reduce the heat to low and cook for around 15 mins or until vegetables are tender.
Step 3
Once cooked remove from heat and add baby spinach to wilt.
Step 4
Set aside to slightly cool ( approximately 15minutes)
Step 5
Add the blue cheese and cream.
Blend until smooth with a stick blender.
Step 6
Season with salt and pepper and garnish with cream.
Step 7
Serve with fresh crusty bread.
We tend to select sourdough, because whilst also being super delicious, it is more nutritious and easier to digest.
